Old Dauphin Way Baked Salmon & East Bay Baked Steak Fries

Old Dauphin Way Baked Salmon

Ingredients & Tools:

SIDE of Salmon

1/4 C. of Mayonnaise

1 lemon - slice in circles

Sheet pan

2 t. avocado oil

Oven preheat to 375

Pink Himalayan Salt

Knife or spatula to spread mayonnaise


Take a sheet pan and add oil and rub down the sheet pan and sprinkle salt on top of the sheet pan into even coverage.


Take the side of salmon and rinse under cold water and drain.


Place the salmon on the sheet pan and blot excess moisture away with some paper towels.


Rub the salmon down with fingertips to check for small bones that may have been missed.


You may need to use tweezers to remove some of the small bones.


Put 1/4 mayonnaise in a bowl and use a rubber spatula to spread a thin layer even on the

salmon. Do not put the spatula back into the jar of mayonnaise after it touches the fish you

could containment the mayonnaise


Sprinkle the Old Dauphin Way seasoning to evenly coat the salmon.


Now slice the lemon and seared the slices to place on the salmon.


Bake until cooked to the desired temperature.


Cut and serve.


East Bay Baked Steak Fries

Ingredients & Tools:

3 medium potatoes scrubbed and cleaned

1 t of Pink Himalayan Salt

2 T avocado oil or peanut oil

1 sheet pan

Oven set to 450ºF

Mixing bowl

Knife

Cutting Board


Put the sheet pan in the oven to preheat.


In the mixing bowl add the oil, Pink Himalayan Salt, and East Bay Seasoning and mix.


Cut potatoes in long sticks approximately .25 inch in thickness and then crosscut. This way you should end up with .25 x .25 by the length of the potato.


Place potatoes into the bowl and mix well to coat and evenly season the potato sticks.

Pull the pan out and place potatoes onto the sheet pan. Make sure they are evenly distributed and not on top of each other.


Bake for 20 minutes or and pull out and flip over and bake for another 20 minutes. If the potatoes are not done due to being too thick. You can use the broiler to finish. Keep your eyes on the potatoes if using the broiler.
