Play House Spices White Chicken Chili by Alyris Peters


  • 1 lb Chicken (cut into bite size pieces)

  • 1 Yellow onion

  • 1 Bell pepper

  • 8 oz Hatch green chilis

  • Playhouse Spices Weeks Bay Seasoning

  • 1 can yellow & white corn

  • 3 or 4 cloves Garlic

  • 2 cans Great northern beans

  • 1 can Cannellini beans

  • 4 oz Cream cheese (softened)

  • 1 to 2 tablespoons of Masa Flour (depending on thickness desired)

  • Salt & pepper to taste


  1. Heat a large pot over medium heat. Once hot, add a drizzle of olive oil and chicken. Season with a dash of salt & pepper and heavy sprinkle of Playhouse Spices Weeks Bay Seasoning.

  2. Cook until chicken is golden brown, then add peppers & onions. Cook until translucent and soft. Add garlic & cook until fragrant.

  3. Season liberally with Playhouse Spices Weeks Bay Seasoning. Add masa flour, hatch green chilis and 3 cups of water. Cover and simmer for about 15 minutes, stirring occasionally.

  4. Drain and rinse the corn & beans.

  5. Add the cream cheese to the pot and stir until combined.

  6. Add the corn & beans. Cook for another 15 - 20 minutes.

  7. Serve with shredded cheese, tortilla strips, avocado, a dollop of sour cream & hot sauce if desired.

  8. Enjoy!
